Ingredients

2 pre-made pie crusts (9-inch)

4 medium apples (Granny Smith or Honeycrisp), peeled, cored, and sliced

1/2 cup granulated sugar

1 tsp cinnamon

1/4 tsp nutmeg

1 tbsp lemon juice

8 oz cream cheese, softened

1/2 cup powdered sugar

1 tsp vanilla extract

1 egg (for egg wash)

1/4 cup unsalted butter, melted

1/4 cup brown sugar

1/4 cup all-purpose flour

Extra sugar and cinnamon for dusting

Instructions

Prepare the Filling: In a large bowl, combine the sliced apples, granulated sugar, cinnamon, nutmeg, and lemon juice. Toss until the apples are well coated. Set aside to marinate for about 15 minutes.

Make the Cream Cheese Mixture: In a separate bowl, beat the softened cream cheese with powdered sugar and vanilla extract until smooth and creamy. Set aside.

Prepare the Pie Crust: Preheat your oven to 375°F (190°C). Roll out one pie crust and fit it into a 9-inch pie pan. Trim any excess dough hanging over the edges.

Layer the Pie: Spread the cream cheese mixture evenly across the bottom of the pie crust. Layer the marinated apple mixture over the cream cheese.

Prepare the Snickerdoodle Topping: In a small bowl, mix together the melted butter, brown sugar, flour, and a teaspoon of cinnamon to create a crumbly topping. Evenly sprinkle this mixture over the apple filling.

Top with Second Crust: Roll out the second pie crust and place it over the pie. Trim and crimp the edges to seal. Cut a few slits in the top crust to allow steam to escape.

Add Egg Wash: Beat the egg in a small bowl and brush it over the top crust for a golden finish. Sprinkle some additional sugar and cinnamon on top for extra flavor.

Bake the Pie: Place the pie in the preheated oven and bake for 45-50 minutes, or until the crust is golden and the apples are tender.

Cool and Serve: Once baked, allow the pie to cool for at least 30 minutes before slicing. Serve warm or at room temperature, possibly with a scoop of vanilla ice cream!
