1 cup granulated sugar

1/4 cup granulated sugar (for coating)

1 tablespoon ground cinnamon (for coating)

Preheat the Oven: Begin by preheating your oven to 350°F (175°C) and lining a baking sheet with parchment paper.

    Cream the Butter and Sugar: In a large mixing bowl, using an electric mixer, beat the softened butter and 1 cup of granulated sugar together until light and fluffy. This should take about 2-3 minutes.

      Combine Wet Ingredients: Add in the egg and vanilla extract, then mix until fully incorporated.

        Mix the Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, and 1 teaspoon of ground cinnamon.

          Combine Mixtures: Gradually add the dry ingredients to the wet mixture, mixing until just combined. Be careful not to over-mix; a few lumps are perfectly fine.

            Chill the Dough: Cover the dough with plastic wrap and chill it in the refrigerator for about 30 minutes. This helps the cookies maintain their shape while baking.

              Prepare Cinnamon Sugar: In a small bowl, mix together the 1/4 cup of granulated sugar and 1 tablespoon of ground cinnamon. Set it aside for coating the cookies.

                Shape the Cookies: Once chilled, scoop about 1.5 tablespoons of dough and roll them into balls. Place the dough balls on the prepared baking sheet, about 2 inches apart.

                  Coat in Cinnamon Sugar: After shaping all the cookies, roll each dough ball in the cinnamon sugar mixture to fully coat.
