Southern Crab Beignets

Ingredients
  

1 pound fresh lump crab meat

1/2 cup all-purpose flour

1/2 cup cornstarch

1 teaspoon baking powder

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/4 teaspoon cayenne pepper (adjust to taste)

1/2 teaspoon salt

2 eggs, beaten

1 tablespoon Dijon mustard

2 tablespoons chopped fresh parsley

1/2 cup green onions, finely chopped

1/4 cup mayonnaise

1 tablespoon lemon juice

Vegetable oil for frying

Powdered sugar (for serving)

Hot sauce (optional, for serving)

Instructions
 

In a large bowl, gently combine the lump crab meat, chopped parsley, and green onions. Be careful not to break up the crab too much.

    In a separate bowl, whisk together the flour, cornstarch, baking powder, garlic powder, onion powder, cayenne pepper, and salt.

      In another bowl, mix the beaten eggs with Dijon mustard and lemon juice. Slowly add this mixture to the dry ingredients, stirring until just combined. The mixture should be thick but able to hold the crab lumps.

        Gently fold in the crab mixture until all ingredients are incorporated.

          Heat vegetable oil in a deep fryer or large pot to 350°F (175°C).

            Using a tablespoon, carefully drop dollops of the crab batter into the hot oil, frying in small batches to avoid overcrowding. Fry for about 3-4 minutes or until golden brown, flipping them halfway through for even cooking.

              Once cooked, remove the beignets with a slotted spoon and place them on a paper towel-lined plate to drain excess oil.

                To serve, dust the beignets with powdered sugar and serve with a side of hot sauce and mayonnaise for dipping.
