1 lb smoked sausage (such as kielbasa or andouille), sliced

1 medium onion, diced

2 cloves garlic, minced

2 tablespoons olive oil or bacon grease

1 tablespoon apple cider vinegar

1 teaspoon smoked paprika

½ teaspoon cayenne pepper (adjust to taste)

Salt and pepper to taste

2 green onions, chopped (for garnish)

Heat the Oil: In a large skillet or frying pan, heat the olive oil or bacon grease over medium heat until hot.

    Sauté the Sausage: Add the sliced sausage to the pan and cook for about 5-7 minutes or until browned and slightly crispy. Stir occasionally to ensure even cooking.

      Add Onions and Garlic: Toss in the diced onion and minced garlic, cooking for an additional 3-4 minutes until the onion is soft and translucent.
