4 bone-in pork chops (about 1-inch thick)

Salt and pepper, to taste

1 teaspoon garlic powder

1 teaspoon onion powder

1 tablespoon paprika

2 tablespoons vegetable oil

1 medium onion, sliced

2 cloves garlic, minced

1 cup chicken broth

1 cup heavy cream

1 tablespoon Worcestershire sauce

2 teaspoons Dijon mustard

1 teaspoon dried thyme

1 teaspoon sage

Fresh parsley, for garnish

Instructions
 

Season the Pork Chops: Pat the pork chops dry with paper towels. Season both sides generously with salt, pepper, garlic powder, onion powder, and paprika. Let them sit at room temperature for about 15 minutes.

    Sear the Pork Chops: In a large skillet, heat the vegetable oil over medium-high heat. Once hot, add the pork chops. Sear them for about 4-5 minutes on each side until they are golden brown. Remove from the skillet and set aside.

      Cook the Onions and Garlic: In the same skillet, add the sliced onions and cook for 3-4 minutes until they start to soften. Add the minced garlic and cook for an additional minute until fragrant.

        Make the Gravy: Pour in the chicken broth, scraping up any browned bits from the bottom of the skillet. Stir in the heavy cream, Worcestershire sauce, Dijon mustard, thyme, and sage. Bring the mixture to a simmer.

          Return the Chops to the Skillet: Reduce the heat to low, and nestle the seared pork chops back into the skillet, spooning some of the gravy over them. Cover and let simmer for about 20-25 minutes, or until the pork is cooked through and tender.

            Finish and Serve: Once done, check for seasoning and adjust salt and pepper as necessary. Garnish with fresh parsley before serving. Serve the pork chops with plenty of the creamy gravy over rice, mashed potatoes, or warm biscuits.
