1 cup cooked, shredded chicken (or swap with black beans for a vegetarian option)

1 cup shredded cheddar cheese

1 cup frozen corn, thawed

1 cup black beans, drained and rinsed

1/2 cup red bell pepper, finely diced

1/2 cup green onion, chopped

1/2 teaspoon ground cumin

1/2 teaspoon chili powder

1/4 teaspoon garlic powder

Salt and pepper to taste

10 large flour tortillas

Vegetable oil, for frying

Optional: Dipping sauce (such as ranch or spicy salsa)

Prepare the Filling: In a large mixing bowl, combine the shredded chicken (or black beans), shredded cheddar cheese, corn, black beans, red bell pepper, green onion, cumin, chili powder, garlic powder, salt, and pepper. Stir until everything is evenly mixed.

    Assemble the Egg Rolls: Lay a tortilla flat on a clean surface. Place about 2-3 tablespoons of the filling in the center of the tortilla. Fold the sides of the tortilla inwards, then roll from the bottom up to create a tight wrap. Repeat this process with the remaining tortillas and filling.

      Heat the Oil: In a large skillet or frying pan, pour enough vegetable oil to cover the bottom, about 1/4 inch deep. Heat the oil over medium-high heat until it's shimmering (around 350°F or 175°C).

        Fry the Egg Rolls: Carefully place 3-4 egg rolls in the hot oil, seam side down. Fry for about 3-4 minutes per side until golden brown and crispy. Remove the egg rolls from the oil and drain on a paper towel-lined plate. Continue frying until all egg rolls are cooked.

          Serve: Allow the egg rolls to cool slightly, then serve warm with dipping sauce of your choice.
