8 oz (225g) spaghetti

2 tbsp olive oil

3-4 garlic cloves, minced

1 small onion, finely chopped

1 cup fresh spinach, chopped

1/2 cup sun-dried tomatoes, chopped (oil-packed for added flavor)

1 cup heavy cream

1/2 cup grated Parmesan cheese

1 tsp dried oregano

1/2 tsp red pepper flakes (optional)

Salt and pepper, to taste

Fresh basil leaves, for garnish

Cook the Spaghetti: Begin by boiling a large pot of salted water. Add the spaghetti and cook according to the package directions until al dente. Reserve 1/2 cup of pasta water before draining the spaghetti.

    Sauté Aromatics: In a large skillet over medium heat, add the olive oil. Once hot, add the minced garlic and chopped onion. Sauté for about 3-4 minutes, or until the onions are translucent and fragrant.

      Add Spinach and Tomatoes: Stir in the chopped spinach and sun-dried tomatoes. Cook for an additional 2-3 minutes until the spinach is wilted.

        Make the Cream Sauce: Reduce the heat to low and pour in the heavy cream. Stir to combine. Add in the Parmesan cheese, dried oregano, and red pepper flakes (if using). Allow the mixture to simmer gently, stirring frequently, until the sauce thickens slightly, about 5 minutes.

          Combine with Pasta: Add the drained spaghetti to the skillet with the sun-dried tomato cream sauce. Toss everything together until the spaghetti is well coated. If the sauce is too thick, gradually add reserved pasta water until you reach your desired consistency. Season with salt and pepper to taste.
