For the Cajun Shrimp:

1 lb large shrimp, peeled and deveined

2 tablespoons Cajun seasoning

1 tablespoon olive oil

1 teaspoon smoked paprika

Salt and pepper to taste

Juice of 1 lime

For the Avocado-Lime Crema:

1 ripe avocado

½ cup sour cream or Greek yogurt

1 lime, juiced

1 garlic clove, minced

Salt to taste

For the Tacos:

8 small corn or flour tortillas

1 cup shredded red cabbage

1 ripe tomato, diced

½ small red onion, finely chopped

Fresh cilantro for garnish

Lime wedges for serving

Marinate the Shrimp: In a medium bowl, combine the shrimp, Cajun seasoning, olive oil, smoked paprika, salt, and pepper. Squeeze the juice of half the lime over the shrimp and toss to coat. Let it marinate for about 15-20 minutes.

    Prepare the Avocado-Lime Crema: While the shrimp is marinating, make the crema. In a food processor, blend together the avocado, sour cream (or Greek yogurt), lime juice, minced garlic, and a pinch of salt until smooth and creamy. Adjust seasoning if needed. Set aside.

      Cook the Shrimp: Heat a large skillet over medium-high heat. Once hot, add the marinated shrimp to the skillet in a single layer. Cook for 2-3 minutes on each side, or until the shrimp are pink and opaque. Remove from heat and drizzle with the remaining lime juice.

        Warm the Tortillas: In a dry skillet or directly over a gas flame, warm the tortillas for about 30 seconds on each side, until soft and pliable.

          Assemble the Tacos: Spread a generous spoonful of avocado-lime crema on each tortilla. Top with a handful of shredded red cabbage, followed by the cooked Cajun shrimp. Add diced tomatoes and a sprinkle of chopped red onion.
