12 oz (340g) of penne pasta

1 lb (450g) boneless, skinless chicken thighs, diced

2 tbsp olive oil

1 medium onion, finely chopped

3 cloves garlic, minced

1 tsp red pepper flakes (adjust to taste)

1 cup sun-dried tomatoes, chopped (in oil preferred)

1 cup heavy cream

1 cup grated Parmesan cheese

1 cup baby spinach

Salt and pepper, to taste

Fresh basil, for garnish

Cook the Pasta: In a large pot, bring salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside, reserving about ½ cup of the pasta water.

    Cook the Chicken: In a large skillet, heat the olive oil over medium-high heat. Add diced chicken thighs, season with salt, pepper, and red pepper flakes. Cook for about 5-7 minutes until golden and cooked through. Remove chicken from skillet and set aside.

      Sauté Aromatics: In the same skillet, reduce heat to medium. Add chopped onion and sauté for about 4-5 minutes until translucent. Add minced garlic and cook for an additional minute, until fragrant.

        Add Sun-Dried Tomatoes: Stir in the chopped sun-dried tomatoes and cook for another 2 minutes, allowing the flavors to meld.

          Make the Cream Sauce: Pour in the heavy cream, stirring well to combine with the aromatics. Let it simmer for 3-4 minutes, then add the grated Parmesan cheese. Stir until melted and smooth. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.

            Combine Ingredients: Return the cooked chicken to the skillet and add the cooked pasta. Mix well to coat the pasta in the creamy sauce. Stir in the baby spinach, letting it wilt for about 1-2 minutes.

              Season and Serve: Taste and adjust seasoning with more salt, pepper, or red pepper flakes if desired. Serve warm, garnished with fresh basil.
