2 packs of instant ramen noodles (discard the seasoning packets)

1 can (13.5 oz) coconut milk

2 tablespoons red curry paste

1 tablespoon soy sauce

1 tablespoon fish sauce (optional)

1 teaspoon sesame oil

2 cups vegetable broth

1 cup mixed vegetables (bell peppers, carrots, and snap peas)

1 cup fresh spinach

1 tablespoon grated ginger

3 garlic cloves, minced

1-2 Thai bird chilies, sliced (adjust to taste)

Fresh cilantro, for garnish

Lime wedges, for serving

Soft-boiled eggs (optional)

Instructions
 

Prepare the Noodles: In a large pot of boiling water, cook the ramen noodles according to package instructions until al dente. Drain and set aside.
