Ingredients

1 medium head cauliflower, cut into bite-sized florets

1 cup all-purpose flour

1 cup plant-based milk (almond, oat, or soy)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1/2 teaspoon cayenne pepper (adjust for spice preference)

Salt and pepper, to taste

1 cup panko breadcrumbs

1/2 cup BBQ sauce (your favorite brand)

1/4 cup honey or agave syrup

2 tablespoons hot sauce (such as Sriracha or Franks)

1 tablespoon olive oil

Fresh parsley, chopped (for garnish)

Instructions

Preheat Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup.

Prepare Batter: In a large bowl, whisk together the flour, plant-based milk, garlic powder, onion powder, smoked paprika, cayenne pepper, salt, and pepper until smooth and well combined.

Bread the Cauliflower: Place the panko breadcrumbs in a separate shallow dish. Dip each cauliflower floret into the batter, allowing excess to drip off, then roll it in the panko breadcrumbs until fully coated. Arrange the breaded florets in a single layer on the prepared baking sheet.

Bake: Drizzle or spray the breaded cauliflower with olive oil to help them crisp up. Bake for 20-25 minutes, flipping halfway through, until golden brown and crispy.

Prepare Sauce: While the cauliflower bakes, in a small saucepan over medium heat, combine the BBQ sauce, honey (or agave), hot sauce, and a pinch of salt. Stir well and let simmer for about 5 minutes, allowing it to thicken slightly.

Coat Cauliflower: Once the cauliflower is baked, remove it from the oven and drizzle the sauce over the bites, tossing to coat evenly. If desired, return the coated cauliflower to the oven for an additional 5-10 minutes to caramelize the sauce.

Serve: Remove from the oven, garnish with fresh chopped parsley, and serve immediately with additional BBQ sauce for dipping.
