2 cups fresh blueberries

1 cup coconut water

1 tablespoon honey (optional, adjust to taste)

1-2 fresh jalapeños (adjust according to heat preference)

1 tablespoon lime juice

Fresh mint leaves for garnish

Prepare the Jalapeños: Start by slicing the jalapeños in half and removing the seeds for a milder flavor. If you prefer intense heat, leave some seeds in. Dice the jalapeños finely and set aside.

    Blend the Blueberry Mixture: In a blender, combine the fresh blueberries, coconut water, honey, diced jalapeños, and lime juice. Blend until smooth. Taste the mixture and adjust sweetness if needed by adding more honey.

      Strain the Mixture (Optional): For a smoother texture, you can strain the mixture through a fine-mesh sieve to remove the blueberry skins and jalapeño bits. This step is optional; if you enjoy a bit of texture, feel free to skip it.

        Pour into Molds: Carefully pour the blueberry mixture into popsicle molds, leaving about half an inch of space at the top to allow for expansion as they freeze.

          Insert Sticks: If your molds come with handles, insert them into the mixture. If not, freeze the molds for about 1-2 hours before inserting wooden sticks to prevent them from floating.

            Freeze: Place the molds in the freezer and freeze for at least 4-6 hours, or until solid.

              Release the Popsicles: To remove the popsicles, run warm water over the outside of the molds for a few seconds. Gently pull on the sticks to release the popsicles.

                Garnish & Serve: Before serving, garnish each popsicle with a fresh mint leaf for a refreshing touch. Enjoy the spicy, sweet, and tangy flavors!
