1 can (15 oz) chickpeas (garbanzo beans), drained and rinsed

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon cayenne pepper (adjust based on heat preference)

½ teaspoon ground cumin

½ teaspoon sea salt

¼ teaspoon black pepper

Optional: 1 tablespoon nutritional yeast (for a cheesy flavor)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Chickpeas: After draining and rinsing the chickpeas, spread them on a clean kitchen towel or paper towels. Pat them dry gently; this will help them get crispy during roasting.

      Season the Chickpeas: In a large bowl, combine the dried chickpeas, olive oil, smoked paprika, garlic powder, onion powder, cayenne pepper, ground cumin, sea salt, black pepper, and nutritional yeast (if using). Toss until the chickpeas are evenly coated with the seasoning.

        Roast the Chickpeas: Spread the seasoned chickpeas in a single layer on a baking sheet lined with parchment paper. Make sure they are well spread out for even roasting.

          Bake: Place the baking sheet in the preheated oven and roast the chickpeas for about 25-30 minutes, tossing them halfway through to ensure even cooking. They should be golden brown and crispy when done.
