Spicy Thai Peanut Noodles

8 oz rice noodles

1 cup shredded carrots

1 bell pepper, thinly sliced (preferably red or yellow)

1 cup sugar snap peas or snow peas

1 cup bean sprouts

3 green onions, sliced

1/4 cup fresh cilantro, chopped

1/4 cup unsalted roasted peanuts, crushed (for garnish)

For the Peanut Sauce:

1/2 cup creamy peanut butter

1/4 cup soy sauce (low sodium recommended)

2 tablespoons rice vinegar

2 tablespoons honey or maple syrup

1 tablespoon chili garlic sauce (adjust to taste)

1 tablespoon sesame oil

1 tablespoon lime juice

1-2 cloves garlic, minced

Water (to thin sauce, as needed)

Instructions
 

Cook the Noodles: In a large pot, bring salted water to a boil. Add the rice noodles and cook according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside.

    Prepare the Sauce: In a mixing bowl, combine peanut butter, soy sauce, rice vinegar, honey (or maple syrup), chili garlic sauce, sesame oil, lime juice, and minced garlic. Whisk together until smooth. If the sauce is too thick, gradually add water to reach desired consistency.

      Sauté the Vegetables: In a large skillet or wok over medium heat, add a tablespoon of oil. Once hot, add the shredded carrots, bell pepper, and sugar snap peas. Stir-fry for about 3-4 minutes until the vegetables are tender but still crisp.

        Combine Everything: Add the cooked noodles to the skillet with the sautéed vegetables. Pour the peanut sauce over the noodle mixture. Toss everything together until the noodles and veggies are well coated in the sauce and heated through, about 2-3 minutes.

          Serve: Remove from heat, and stir in the fresh bean sprouts and half of the sliced green onions and cilantro for added freshness. Plate the noodles and sprinkle with the remaining green onions, cilantro, and crushed peanuts for garnish.
