Spinach Mushroom Pasta

8 oz (225g) spaghetti or fettuccine

2 cups fresh spinach, washed and chopped

1 cup mushrooms, sliced (button or cremini)

3 cloves garlic, minced

1 small onion, finely chopped

1/2 cup heavy cream

1/2 cup grated Parmesan cheese

2 tbsp olive oil

1 tbsp butter

Salt and pepper to taste

1/4 tsp red pepper flakes (optional)

Fresh basil leaves for garnish

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set it aside.

    Sauté the Vegetables: In a large skillet, heat olive oil and butter over medium heat. Add the chopped onion and sauté until it becomes translucent, about 3-4 minutes. Then, add the minced garlic and sliced mushrooms. Cook until the mushrooms become golden and their moisture has evaporated, approximately 5-7 minutes.

      Add Spinach: Stir in the chopped spinach, red pepper flakes (if using), and a pinch of salt and pepper. Cook until the spinach wilts, about 2-3 minutes.

        Create the Sauce: Pour in the heavy cream, stirring well to combine with the vegetables. Allow the mixture to simmer on low heat for about 3-4 minutes until slightly thickened.

          Combine Pasta and Sauce: Add the cooked pasta to the skillet with the spinach and mushroom sauce. Toss gently to coat the pasta evenly, adding reserved pasta water a little at a time until you reach your desired sauce consistency.

            Add Cheese: Stir in the grated Parmesan cheese, mixing well until the cheese is melted and the sauce is creamy. Adjust seasoning with more salt and pepper if needed.
