For the Biscuits:

2 cups all-purpose flour

1 tablespoon baking powder

1/2 teaspoon baking soda

1 teaspoon salt

1/4 cup granulated sugar

1/2 cup cold unsalted butter, cubed

3/4 cup buttermilk

For the Honey Butter:

1/2 cup unsalted butter, softened

1/4 cup honey

1/2 teaspoon ground cinnamon (optional)

A pinch of salt

Preheat the Oven: Preheat your oven to 450°F (232°C) and line a baking sheet with parchment paper.

    Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, baking powder, baking soda, salt, and sugar until well combined.

      Incorporate Butter: Add the cold, cubed butter to the flour mixture. Using a pastry cutter or your fingers, work the butter into the flour until the mixture resembles coarse crumbs (some pea-sized pieces of butter are okay).

        Add Buttermilk: Pour in the buttermilk and gently stir with a wooden spoon or spatula until just combined. Be careful not to overmix; it's alright if the dough is a bit shaggy.

          Shape the Dough: Turn the dough out onto a floured surface and gently pat it into a rectangle about 1-inch thick. Fold the dough over onto itself three times like a letter, turning it 90 degrees after each fold for flaky layers.

            Cut Out Biscuits: Use a floured biscuit cutter or a drinking glass to cut out biscuits from the dough. Place them on the prepared baking sheet, making sure they’re touching each other for soft sides.

              Bake the Biscuits: Bake in the preheated oven for about 12-15 minutes or until the tops are golden brown.

                Prepare Honey Butter: While the biscuits are baking, whip together the softened butter, honey, ground cinnamon, and a pinch of salt in a small bowl until smooth and well combined.

                  Serve: Once the biscuits are done, brush them with a bit of the honey butter while they are still warm. Serve warm with additional honey butter on the side for spreading.
