Ingredients

1 lb (450g) boneless, skinless chicken thighs (cut into bite-sized pieces)

1/2 cup teriyaki sauce

1 cup fresh pineapple chunks (or canned if fresh is not available)

1 tablespoon vegetable oil

1 red bell pepper (sliced)

1 yellow bell pepper (sliced)

1 small red onion (sliced)

2 cloves garlic (minced)

1 teaspoon fresh ginger (grated)

1 tablespoon sesame seeds (for garnish)

2 green onions (sliced for garnish)

Cooked rice or quinoa (for serving)

Instructions

Prepare the Chicken: In a medium bowl, combine the chicken pieces and teriyaki sauce. Allow it to marinate for at least 15 minutes to soak in the flavors.

Heat the Skillet: In a large skillet over medium-high heat, add the vegetable oil. Once hot, add the marinated chicken and cook for about 5-7 minutes, stirring occasionally, until the chicken is cooked through and starts to caramelize, creating a sticky texture.

Sauté the Vegetables: Add the sliced red and yellow bell peppers, and red onion to the skillet. Stir them in with the chicken and sauté for an additional 3-4 minutes until the vegetables are slightly softened.

Add Pineapple and Flavorings: Stir in the pineapple chunks, minced garlic, and grated ginger. Cook for another 2-3 minutes, allowing the pineapple to release its juices and create a sticky sauce.

Adjust Sauce Consistency: Taste and adjust the seasoning if necessary, adding more teriyaki sauce for extra flavor or a dash of salt and pepper to your preference.

Garnish: Once everything is heated through and coated in the delicious sauce, remove the skillet from heat. Sprinkle sesame seeds and sliced green onions on top for a fresh crunch.

Serve: Spoon over a bed of cooked rice or quinoa in bowls and enjoy the tropical flavors of this Sticky Pineapple Teriyaki Chicken Skillet!
