Ingredients

For the Cake:

2 cups all-purpose flour

1 ½ cups granulated sugar

½ cup unsalted butter, softened

1 cup milk

3 large eggs

2 teaspoons baking powder

1 teaspoon vanilla extract

½ teaspoon salt

1 cup fresh strawberries, diced

For the Strawberry Sauce:

1 cup fresh strawberries, sliced

¼ cup granulated sugar

1 tablespoon lemon juice

For the Frosting:

1 cup heavy whipping cream

½ cup powdered sugar

1 teaspoon vanilla extract

½ cup fresh strawberries, pureed (optional for color)

Instructions

Preheat the Oven:

Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

      Mix the Dry Ingredients:

In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.

          Cream the Butter and Sugar:

In a large mixing bowl, beat the softened butter and granulated sugar together until light and fluffy (about 3-4 minutes).

              Add Eggs and Vanilla:

Add the eggs one at a time, mixing well after each addition. Then mix in the vanilla extract.

                  Combine Ingredients:

Gradually add the dry ingredient mixture to the butter and sugar mixture, alternating with the milk. Begin and end with the dry ingredients. Mix until just combined. Gently fold in the diced strawberries.

                      Bake the Cakes:

Pour the batter evenly into the prepared pans and smooth the tops. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean. Allow cakes to cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.

                          Prepare the Strawberry Sauce:

In a small saucepan, combine sliced strawberries, sugar, and lemon juice. Cook over medium heat until the strawberries release their juices and the sauce thickens slightly (about 5-7 minutes). Allow it to cool before using.

                              Make the Frosting:

In a mixing bowl, beat the heavy cream, powdered sugar, and vanilla extract until soft peaks form. If desired, add the pureed strawberries for a light pink color and beat until well blended but not overwhipped.

                                  Assemble the Cake:

Once the cakes are completely cool, place one layer on a serving plate. Spread a layer of strawberry sauce over the top, then add a layer of whipped frosting. Place the second cake layer on top and repeat the process.

                                      Finish the Cake:

Frost the top and sides of the cake with the remaining whipped cream frosting. Drizzle with any remaining strawberry sauce and garnish with whole strawberries if desired.

                                          Serve and Enjoy:

Slice and serve your delightful Strawberry Dream Cake chilled or at room temperature. Perfect for any celebration or a sweet treat!
