Ingredients

1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

8 oz cream cheese, softened

1 cup powdered sugar

1 cup whipped topping (Cool Whip)

2 cups fresh strawberries, sliced

1 cup strawberry puree (made from blended fresh strawberries)

1 tablespoon lemon juice

1 teaspoon vanilla extract

Extra whipped topping for garnish

Fresh strawberries for garnish

Instructions

Prepare the Crust: In a medium bowl, combine the graham cracker crumbs and melted butter. Mix until the crumbs are well-coated. Press the mixture firmly into the bottom of a 9x13-inch baking dish to form a crust. Refrigerate while you prepare the filling.

Make the Cheesecake Layer: In a large mixing bowl, beat the softened cream cheese with an electric mixer until creamy and smooth. Gradually add the powdered sugar, and continue beating until fully incorporated. Mix in the lemon juice and vanilla extract. Fold in the whipped topping gently until well combined.

Layer the Cheesecake Mixture: Spread the cheesecake mixture evenly over the chilled graham cracker crust, smoothing it out with a spatula. Return to the refrigerator to set for about 20-30 minutes.

Prepare the Strawberry Layer: In another bowl, combine the sliced strawberries with the strawberry puree. Stir gently to coat the strawberries evenly.

Assemble the Dessert: Once the cheesecake layer has set, evenly distribute the strawberry mixture over the cheesecake layer. Occasionally, drizzle a bit of extra puree over the top for added flair.

Chill and Serve: Cover the dessert with plastic wrap and allow it to chill in the refrigerator for at least 2 hours or overnight for better flavor and texture. When ready to serve, top with extra whipped topping and garnish with fresh strawberries.
