Strawberry Glazed French Crullers

Ingredients
  

1 cup water

1/2 cup unsalted butter

1 cup all-purpose flour

1/4 teaspoon salt

1 tablespoon granulated sugar

4 large eggs

1 teaspoon vanilla extract

Oil for frying (vegetable or canola)

For the Strawberry Glaze:

1 cup powdered sugar

2-3 tablespoons fresh strawberry purée (made from about 4-5 strawberries)

1 teaspoon lemon juice

Optional: fresh strawberries for garnish

Instructions
 

In a medium saucepan, bring the water and butter to a boil over medium heat.

    Once the butter has melted and the water is boiling, remove the saucepan from the heat and quickly stir in the flour, salt, and sugar until a smooth dough forms.

      Return the saucepan to low heat and continue stirring for another 1-2 minutes until the dough forms a ball and pulls away from the sides of the pan.

        Transfer the dough to a mixing bowl and let it cool slightly for about 5 minutes.

          Add the eggs one at a time, stirring well after each addition until fully incorporated. Mix in the vanilla extract. The dough should be smooth and somewhat thick.

            Heat oil in a deep-fryer or large pot to 375°F (190°C).

              Transfer the dough to a piping bag fitted with a star tip (about 1.5 inches in diameter).

                Pipe 4-inch lengths of dough into the hot oil, making sure to space them apart, as they will puff up during cooking.

                  Fry the crullers for about 3-4 minutes on each side or until they are golden brown. Carefully remove them from the oil with a slotted spoon and drain on paper towels.

                    While the crullers are cooling, prepare the strawberry glaze by combining the powdered sugar, strawberry purée, and lemon juice in a bowl. Whisk until smooth, adjusting the strawberry purée for desired consistency.

                      Once the crullers are cool, dip the tops into the strawberry glaze, then place them on a wire rack to set.

                        Optionally, garnish with fresh strawberry slices if desired before serving.
