1 lb (450g) boneless, skinless chicken thighs or breasts

1 cup uncooked jasmine rice

1 cup corn kernels (fresh, canned, or frozen)

1/2 cup crumbled feta cheese

1/4 cup mayonnaise

1 tablespoon lime juice

1 teaspoon chili powder

1 teaspoon smoked paprika

1 teaspoon garlic powder

Salt and black pepper to taste

1 avocado, diced

1/4 cup fresh cilantro, chopped

Lime wedges for serving

Optional: Hot sauce for garnish

Prepare the Chicken: In a small bowl, mix the chili powder, smoked paprika, garlic powder, salt, and pepper. Rub the spice mixture evenly over the chicken thighs or breasts.

    Cook the Chicken: Heat a large skillet over medium-high heat and add a splash of oil. Add the chicken and cook for about 6-7 minutes on each side, or until golden brown and the internal temperature reaches 165°F (75°C). Remove from heat and let it rest for a few minutes before slicing.

Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes or until the rice is cooked and water is absorbed. Fluff with a fork when done.

        Prepare the Corn Sauce: In a small bowl, combine the corn, mayonnaise, lime juice, and a pinch of salt. If using fresh corn, you can sauté it in a separate small skillet for 3-4 minutes until slightly charred for added flavor.
