Stuffed Pepper Meatball Casserole

1 lb ground beef

1 lb ground pork

1 cup cooked rice (white or brown)

1 medium onion, finely chopped

2 cloves garlic, minced

1 cup diced bell peppers (red, green, or yellow)

1 cup marinara sauce (homemade or store-bought)

1 ½ cups shredded mozzarella cheese

½ cup grated Parmesan cheese

1 teaspoon Italian seasoning

Salt and pepper to taste

Fresh parsley for garnish

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Make the Meatballs: In a large mixing bowl, combine the ground beef, ground pork, cooked rice, chopped onion, minced garlic, diced bell peppers, Italian seasoning, salt, and pepper. Mix well until all ingredients are incorporated. Form the mixture into 1½-inch meatballs and set aside.

      Brown the Meatballs: In a large skillet over medium heat, add a drizzle of olive oil. Once hot, add the meatballs and cook until browned on all sides (about 7-10 minutes). They do not need to be cooked through, as they will finish cooking in the oven. Remove meatballs and set aside.

        Prepare the Casserole Base: In the same skillet, pour in the marinara sauce and bring to a simmer. Add half of the shredded mozzarella cheese and stir until melted and combined.

          Layer the Casserole: In a greased 9x13-inch baking dish, pour the sauce mixture evenly across the bottom. Place the browned meatballs on top of the sauce. Pour the remaining marinara sauce over the meatballs, then sprinkle the rest of the mozzarella cheese and the Parmesan cheese evenly on top.

            Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. After 25 minutes, remove the foil and bake for an additional 15 minutes or until the cheese is bubbly and golden.

              Garnish and Serve: Remove from the oven and let cool for a few minutes. Garnish with freshly chopped parsley before serving.
