1 lb (450g) ground beef (or turkey)

1 medium onion, diced

2 cloves garlic, minced

3 medium bell peppers (red, green, and yellow), diced

1 can (15 oz) diced tomatoes, with juices

1 can (15 oz) tomato sauce

4 cups beef broth (or vegetable broth for a vegetarian version)

1 cup uncooked rice (white or brown)

1 tablespoon Italian seasoning

1 teaspoon paprika

Salt and pepper to taste

2 tablespoons olive oil

Fresh parsley or cilantro, for garnish

Shredded cheese (cheddar or mozzarella), for serving

Cook the Meat: In a large pot, heat the olive oil over medium heat. Add the ground beef and cook until browned, breaking it apart with a spatula. Drain excess fat if necessary.

    Sauté the Vegetables: Add the diced onion and garlic to the pot with the browned meat. Cook for about 3-4 minutes until the onions become translucent.

      Add the Peppers: Stir in the diced bell peppers and cook for an additional 5 minutes until they start to soften.

        Combine Ingredients: Add the diced tomatoes, tomato sauce, beef broth, and uncooked rice. Mix well to combine.

          Season the Soup: Stir in the Italian seasoning, paprika, salt, and pepper. Bring the mixture to a boil.
