Ingredients

2 pounds Yukon Gold potatoes, peeled and cubed

1 cup heavy cream

1/2 cup unsalted butter (1 stick), room temperature

1/2 cup sour cream

1 teaspoon garlic powder

Salt to taste

Freshly cracked black pepper to taste

Chives or parsley for garnish (optional)

Instructions

Prep the Potatoes: Place the peeled and cubed Yukon Gold potatoes into a large pot. Cover with cold water and add a pinch of salt. Bring to a boil over medium-high heat.

Cook the Potatoes: Once boiling, reduce the heat to a simmer and let the potatoes cook for about 15-20 minutes, or until fork-tender. Drain the potatoes well.

Warm the Cream and Butter: While the potatoes are cooking, in a small saucepan, combine the heavy cream and butter. Heat over low until the butter is melted and the cream is warmed—this will help keep the potatoes creamy.

Mash the Potatoes: Return the drained potatoes to the pot. Add the warm cream and butter mixture, sour cream, garlic powder, salt, and pepper. Use a potato masher or a potato ricer for an ultra-smooth texture, mashing until desired creaminess is reached.

Season to Taste: Taste your mashed potatoes and adjust the seasoning with more salt, pepper, or garlic powder if needed.

Serve and Garnish: Scoop the creamy mashed potatoes onto serving plates or a large serving bowl. For added flair, drizzle a little extra melted butter on top and garnish with freshly chopped chives or parsley.
