1 cup all-purpose flour

1/2 cup powdered sugar (plus extra for dusting)

1/4 cup unsalted butter, softened

1 cup granulated sugar

2 large eggs

1/3 cup freshly squeezed lemon juice (about 2-3 lemons)

1 teaspoon lemon zest

1/2 teaspoon baking powder

Pinch of salt

Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a 9x9-inch baking dish or line it with parchment paper for easy removal.

    Prepare the Crust: In a medium mixing bowl, combine the softened butter and powdered sugar. Beat until well combined and creamy. Gradually add the flour and a pinch of salt, mixing until a crumbly dough forms.

      Press the Dough: Press the dough evenly into the bottom of the prepared baking dish. Bake in the preheated oven for about 15-20 minutes, or until lightly golden.

        Make the Filling: While the crust is baking, in a separate bowl, whisk together the granulated sugar, eggs, freshly squeezed lemon juice, lemon zest, flour, and baking powder until smooth and well combined.

          Combine and Pour: Once the crust is out of the oven and slightly cooled, pour the lemon filling over the hot crust. Spread it evenly with a spatula.

            Bake Again: Return the dish to the oven and bake for an additional 20-25 minutes, or until the filling is set and just starts to get a light golden color on top.

              Cool and Serve: Allow the lemon bars to cool in the baking dish for at least an hour at room temperature, then refrigerate for another hour to fully set. Once chilled, dust with powdered sugar, cut into squares, and serve!
