1 large ripe banana, mashed

1 cup all-purpose flour

1 tablespoon granulated sugar

1 tablespoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1 cup buttermilk (or milk with 1 tablespoon vinegar)

1 large egg

2 tablespoons unsalted butter, melted (plus extra for cooking)

1 teaspoon vanilla extract

Optional toppings: sliced bananas, maple syrup, whipped cream, chopped nuts

Instructions
 

In a large mixing bowl, mash the ripe banana until smooth. There should still be some small lumps for added texture.

    In another bowl, whisk together the all-purpose flour, granulated sugar, baking powder, baking soda, and salt until well combined.

      In a separate bowl, mix the buttermilk, egg, melted butter, and vanilla extract until thoroughly combined.

        Pour the wet ingredients into the dry ingredients and gently stir until just combined. Be careful not to over-mix; it's okay if the batter is slightly lumpy.

          Fold in the mashed banana until evenly distributed throughout the batter.

            Heat a non-stick skillet or griddle over medium heat and add a little butter to coat the surface.

              Once the skillet is hot, pour about 1/4 cup of batter for each pancake onto the skillet. Cook until bubbles begin to form on the surface (about 2-3 minutes).

                Flip the pancakes and cook for another 2-3 minutes until golden brown and cooked through.

                  Remove the pancakes from the skillet and keep them warm in a low oven while you finish cooking the remaining batter.

                    Serve the pancakes warm, topped with sliced bananas, a drizzle of maple syrup, whipped cream, or chopped nuts as desired.
