Ingredients

2 cups all-purpose flour

2 tablespoons granulated sugar

1 tablespoon baking powder

1/2 teaspoon salt

2 large eggs

1 3/4 cups milk

1/2 cup melted butter

1 teaspoon vanilla extract

2 medium apples (Granny Smith or Honeycrisp), peeled and thinly sliced

1 teaspoon cinnamon

2 tablespoons brown sugar

Powdered sugar (for dusting)

Maple syrup (for serving)

Instructions

Preheat the Waffle Iron: Preheat your waffle iron according to the manufacturer's instructions.

Make the Waffle Batter: In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt. In another bowl, beat the eggs and then add the milk, melted butter, and vanilla extract. Combine the wet and dry ingredients until just mixed; don’t overmix.

Prepare the Apple Filling: In a medium bowl, toss the sliced apples with cinnamon and brown sugar until evenly coated.

Cook the Waffles: Lightly grease the preheated waffle iron and pour enough batter to cover the bottom. Close the waffle iron and cook according to the manufacturer's instructions, usually about 3-5 minutes, until golden brown and crisp.

Assemble the Roll-Ups: Once cooked, carefully remove the waffle and place it on a flat surface. While the waffle is still warm, layer a few spoonfuls of the cinnamon-sugar apples down one edge of the waffle.

Roll It Up: Roll the waffle tightly around the apple filling, starting from the edge with the apples. Secure the roll with a toothpick if needed.

Serve: Dust the roll-ups with powdered sugar and drizzle with maple syrup. Serve warm for a delightful treat!
