Ingredients

4 ears of fresh corn on the cob, husked

1/2 cup unsalted butter, softened

3 tablespoons honey

2 tablespoons sweet chili sauce (adjust according to spice preference)

1 teaspoon garlic powder

1/2 teaspoon smoked paprika

1/4 teaspoon sea salt

1/4 teaspoon black pepper

Fresh cilantro or parsley, chopped for garnish (optional)

Lime wedges, for serving (optional)

Instructions

Prep the Corn: Husk the corn and remove all silk. Rinse under cold water to ensure it’s clean. Pat dry with a kitchen towel.

Make the Sweet Chili Honey Butter: In a medium bowl, combine the softened butter, honey, sweet chili sauce, garlic powder, smoked paprika, sea salt, and black pepper. Mix until smooth and well-blended. Taste and adjust sweetness or spice level as desired.

Grill the Corn: Preheat your grill to medium-high heat. Lightly oil the grill grates to prevent sticking. Place the corn directly on the grill, turning occasionally, and grill for 10-12 minutes or until the kernels are tender and slightly charred.

Spread the Butter: Once the corn is grilled to perfection, remove it from the grill. While the corn is still hot, generously slather the sweet chili honey butter all over each ear of corn, allowing it to melt into the warm kernels.

Garnish and Serve: If desired, sprinkle chopped cilantro or parsley over the corn for freshness. Serve with lime wedges on the side for a zesty kick. Enjoy the sweet, spicy, and buttery goodness!
