Ingredients

2 pounds chicken wings

1/2 cup sweet chili sauce

1/4 cup freshly squeezed lime juice (about 2-3 limes)

2 tablespoons soy sauce

2 tablespoons honey

1 teaspoon garlic powder

1 teaspoon ginger powder

1/2 teaspoon smoked paprika

1/4 teaspoon cayenne pepper (adjust to taste)

Salt and black pepper to taste

2 tablespoons chopped fresh cilantro (for garnish)

Lime wedges (for serving)

Instructions

Prep the Chicken: Rinse the chicken wings under cold water and pat them dry with paper towels. Place them in a large mixing bowl.

Make the Marinade: In a separate bowl, whisk together the sweet chili sauce, lime juice, soy sauce, honey, garlic powder, ginger powder, smoked paprika, cayenne pepper, salt, and black pepper until well combined.

Marinate the Wings: Pour the marinade over the chicken wings. Toss to ensure each wing is evenly coated. Cover the bowl with plastic wrap or a lid and refrigerate for at least 1 hour, preferably overnight for maximum flavor.

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with aluminum foil and place a wire rack on top (this allows air to circulate around the wings).

Bake the Wings: Remove the wings from the marinade (reserve the marinade) and place them in a single layer on the wire rack. Bake in the preheated oven for 20 minutes.

Baste and Flip: After 20 minutes, remove the wings from the oven. Brush them with the reserved marinade and flip the wings over. Return them to the oven for an additional 15-20 minutes, or until they are crispy and cooked through (internal temperature should reach 165°F or 75°C).

Optional Broil: For extra crispiness, switch the oven to broil and cook for an additional 2-3 minutes, keeping a close eye to prevent burning.

Serve: Remove the wings from the oven and let them rest for a couple of minutes. Toss them in any remaining marinade if desired. Garnish with chopped cilantro and serve with lime wedges on the side.
