Sweet Corn & Bacon Pasta Bake

300g penne pasta

200g sweet corn (canned or fresh)

150g bacon, diced

1 medium onion, finely chopped

2 cloves garlic, minced

400g diced tomatoes (canned)

200ml heavy cream

150g grated cheddar cheese

100g mozzarella cheese, shredded

1 tsp smoked paprika

1 tsp dried oregano

1 tsp salt

1/2 tsp black pepper

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 180°C (350°F).

    Cook the Pasta: In a large pot of salted boiling water, cook the penne pasta according to package instructions until al dente. Drain and set aside.

      Sauté the Bacon: In a large skillet, add the diced bacon and cook over medium heat until crispy. Using a slotted spoon, transfer the bacon to a paper towel-lined plate to drain excess fat.

        Sauté the Aromatics: In the same skillet, remove some of the bacon grease if necessary, leaving about 1 tablespoon. Add the chopped onion and cook until softened (about 3-4 minutes). Add the minced garlic and sauté for another minute.

          Combine Ingredients: Add the diced tomatoes, heavy cream, sweet corn, smoked paprika, oregano, salt, and pepper to the skillet. Stir in the crispy bacon and let it simmer for about 5-7 minutes until everything is well mixed and heated through.

            Mix with Pasta: In a large bowl, combine the cooked penne pasta with the sauce mixture. Stir until the pasta is fully coated.

              Prepare for Baking: Transfer the pasta mixture into a greased 9x13 inch baking dish. Sprinkle the grated cheddar cheese evenly across the top, followed by a layer of mozzarella cheese.

                Bake: Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the cheese is bubbly and golden brown.

                  Garnish and Serve: Remove from the oven and let it cool for a few minutes. Garnish with freshly chopped parsley before serving.
