For the Corn Fritters:

1 cup fresh sweet corn kernels (or frozen, thawed)

1/2 cup all-purpose flour

1/2 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon smoked paprika (optional)

1/4 cup green onions, finely chopped

1 large egg

1/4 cup buttermilk (or milk)

1 tablespoon fresh parsley, chopped (optional)

Vegetable oil for frying

For the Sandwich:

4 slices of your favorite bread (sourdough, brioche, or whole wheat)

4 large eggs

1/2 avocado, sliced

4 slices of cooked bacon or vegetarian alternative (optional)

Salt and pepper to taste

Fresh arugula or spinach (optional)

Instructions
 

Prepare the Corn Fritter Mixture:

    - In a large mixing bowl, combine the flour, baking powder, baking soda, salt, pepper, and smoked paprika. Mix well.

      - In another bowl, whisk together the egg and buttermilk until smooth. Add the corn kernels, green onions, and parsley (if using) into the egg mixture. Stir to combine.

        - Gradually add the dry ingredients into the wet ingredients, stirring until just combined. Be careful not to overmix.

          Cook the Corn Fritters:

            - Heat about 1/4 inch of vegetable oil in a skillet over medium heat.

              - Once the oil is hot, spoon 2 tablespoons of the fritter batter into the skillet for each fritter. Flatten slightly with the back of the spoon.

                - Cook for about 3-4 minutes on each side or until golden brown and crispy. Remove and place on a paper towel-lined plate to drain excess oil. Repeat until all batter is used.

                  Prepare the Sandwich Components:

                    - In a separate pan, cook the bacon (if using) until crispy. Remove and set aside on paper towels.

                      - In the same pan, fry the eggs to your desired doneness (sunny-side up or over-easy work well). Season with salt and pepper.

                        Assemble the Sandwiches:

                          - Toast the slices of bread to your liking.

                            - On one slice of toasted bread, layer a corn fritter, add a slice of bacon (if using), top with a fried egg, add sliced avocado, and a handful of arugula or spinach.

                              - Top with another corn fritter and then place another slice of bread on top.

                                - Repeat for remaining sandwiches.
