2 lbs boneless, skinless chicken thighs

1 cup pineapple juice

1/2 cup brown sugar

1/4 cup soy sauce

1/4 cup apple cider vinegar

3 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 teaspoon crushed red pepper flakes (optional, for heat)

1 bell pepper, diced (red or yellow for color)

1 onion, sliced

1 can (15 oz) pineapple chunks (drained)

Salt and pepper to taste

Cooked rice or quinoa for serving

Green onions and sesame seeds for garnish

Instructions
 

In a bowl, whisk together pineapple juice, brown sugar, soy sauce, apple cider vinegar, garlic, ginger, and crushed red pepper flakes to create a marinade.

    Place the chicken thighs in the crockpot, and season with salt and pepper. Pour the marinade over the chicken.

      Add the diced bell pepper, sliced onion, and pineapple chunks on top of the chicken in the crockpot.

        Cover and cook on low for 6-8 hours or high for 4-5 hours, until the chicken is tender and fully cooked.

          Once cooked, remove the chicken and shred it with two forks. Return the shredded chicken to the crockpot and stir to combine with the sauce and vegetables.

            Serve over cooked rice or quinoa, garnishing with sliced green onions and sesame seeds.
