Ingredients
  

1 cup all-purpose flour

1/4 teaspoon salt

1/4 cup unsalted butter, cubed

1/2 cup water

2 large eggs

1 teaspoon vanilla extract

1/4 cup granulated sugar

1 tablespoon ground cinnamon

Oil for frying (vegetable or canola)

Optional: Chocolate sauce or caramel for dipping

Instructions
 

In a saucepan, combine the cubed butter, water, and salt. Bring to a boil over medium heat.

    Once boiling, reduce heat to low and add the flour all at once. Stir vigorously until the mixture forms a ball and pulls away from the sides of the pan, about 2 minutes.

      Remove from heat and let cool for about 5 minutes.

        Add eggs one at a time, mixing well after each addition until fully incorporated. Stir in the vanilla extract.

          Heat oil in a deep fryer or a heavy-bottomed pot to 350°F (175°C).

            Using a piping bag fitted with a star tip, pipe small bites (about 1-inch long) directly into the hot oil. Fry in batches, being careful not to overcrowd the pot.

              Fry until golden brown, about 2-3 minutes per side. Use a slotted spoon to transfer the churro bites to a paper towel-lined plate to drain excess oil.

                In a shallow bowl, mix the granulated sugar and ground cinnamon together. While the churro bites are still warm, toss them in the cinnamon sugar coating.

                  Serve warm with chocolate sauce or caramel for dipping, if desired.
