1 cup mashed sweet potatoes (about 1 large sweet potato)

1/2 cup brown sugar

1/4 cup granulated sugar

1/3 cup vegetable oil

2 large eggs

1 teaspoon vanilla extract

1 cup all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon ground cinnamon

1/4 teaspoon nutmeg

1/2 teaspoon salt

1/2 cup chopped pecans or walnuts (optional)

1/2 cup raisins or chocolate chips (optional)

Instructions
 

Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it lightly.

    In a large bowl, combine the mashed sweet potatoes, brown sugar, granulated sugar, vegetable oil, eggs, and vanilla extract. Mix until smooth and well blended.

      In a separate bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.

        Gradually fold the dry ingredients into the sweet potato mixture, stirring gently until just combined. Be careful not to overmix.

          If using, fold in the chopped nuts and raisins or chocolate chips until evenly distributed.

            Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.

              Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center of a muffin comes out clean.

                Allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
