2 large sweet potatoes, sliced into thin rounds

2 tablespoons olive oil

1 teaspoon paprika

1 teaspoon garlic powder

1/2 teaspoon cayenne pepper (optional)

Salt and pepper, to taste

1 cup black beans, rinsed and drained

1 cup shredded cheese (cheddar, Monterey Jack, or a mix)

1/2 cup diced tomatoes

1/4 cup sliced jalapeños (fresh or pickled)

1/2 avocado, diced

1/4 cup fresh cilantro, chopped

1/2 cup sour cream or Greek yogurt

Juice of 1 lime

Zest of 1 lime

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper for easier cleanup.

    Prepare the Sweet Potatoes: In a large bowl, toss the sweet potato rounds with olive oil, paprika, garlic powder, cayenne (if using), salt, and pepper until evenly coated.

      Roast the Sweet Potatoes: Arrange the sweet potato rounds in a single layer on the prepared baking sheet. Roast in the preheated oven for 20-25 minutes until golden and crispy, flipping halfway through.

        Make the Lime Crema: While the sweet potatoes are roasting, combine the sour cream (or Greek yogurt), lime juice, and lime zest in a small bowl. Mix until smooth and set aside in the refrigerator to chill.

          Assemble the Nachos: Once the sweet potatoes are done, remove them from the oven and lower the temperature to 375°F (190°C). Layer the roasted sweet potato rounds on a large serving plate or another baking sheet.

            Add the Toppings: Sprinkle black beans over the sweet potatoes, followed by an even layer of cheese. Add diced tomatoes, jalapeños, and any other desired toppings.

              Melt the Cheese: Place the nachos in the oven for an additional 5-7 minutes, or until the cheese is melted and bubbly.
