Sweet Raspberry Oatmeal Bars

2 cups rolled oats

1 cup almond flour (or regular flour)

1/2 cup brown sugar, packed

1/2 cup unsalted butter, melted

1/2 cup honey or maple syrup

1 teaspoon vanilla extract

1 teaspoon baking powder

1/4 teaspoon salt

1 cup fresh or frozen raspberries

1/4 cup raspberry jam (optional for extra sweetness)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and line an 8x8 inch baking dish with parchment paper, leaving some overhang for easy removal.

    Combine Dry Ingredients: In a large mixing bowl, combine the rolled oats, almond flour, brown sugar, baking powder, and salt. Stir until evenly mixed.

      Mix Wet Ingredients: In another bowl, whisk together the melted butter, honey (or maple syrup), and vanilla extract until well combined.

        Combine Wet and Dry: Pour the wet ingredients into the dry mixture and stir until just combined. The mixture will be slightly crumbly.

          Layer the Mixture: Spread half of the oat mixture into the bottom of the prepared baking dish, pressing down firmly to create an even layer.

            Add Raspberries: Evenly spread the raspberries over the oat layer. If you’re using raspberry jam, dollop small spoonfuls on top of the raspberries for an extra burst of flavor.

              Top it Off: Sprinkle the remaining oat mixture over the raspberries, pressing down gently to pack it in.

                Bake: Place the baking dish in the oven and bake for 25-30 minutes or until the top is golden brown.

                  Cool Down: Remove from the oven and let it cool in the pan for about 15 minutes. Carefully lift it out using the parchment paper. Allow it to cool completely on a wire rack.

                    Slice and Serve: Once completely cool, slice the bars into squares or rectangles. Serve as a delightful snack or breakfast!
