Ingredients

2 ripe mangoes, diced

1 red bell pepper, finely chopped

1 small red onion, finely chopped

1 jalapeño pepper, seeded and minced (adjust for spice preference)

1/4 cup fresh cilantro, chopped

Juice of 1 lime

1 tablespoon honey (or agave syrup for a vegan option)

Salt and pepper to taste

Optional: 1/4 teaspoon ground cumin for an extra flavor kick

Instructions

Prepare the Mangoes: Peel the ripe mangoes and cut them into small, even dice. This ensures every scoop has that delicious mango flavor.

Chop and Mix Ingredients: In a large mixing bowl, combine the diced mango, finely chopped red bell pepper, red onion, and jalapeño pepper. Mix gently to incorporate all the ingredients.

Add Freshness: Stir in the chopped cilantro, lime juice, and honey. Adjust the sweetness by adding more honey if desired.

Season It Up: Sprinkle salt and pepper over the mixture. If you’re adding ground cumin, mix it in at this stage. Taste and adjust seasoning as needed to balance the sweetness and spice.

Chill: For the best flavor, let the salsa sit in the refrigerator for at least 30 minutes allowing the flavors to meld beautifully.

Serve: Give the salsa a gentle stir and serve it with tortilla chips, a topping for grilled fish or chicken, or as a vibrant addition to tacos.
