4 large flour tortillas

1 cup shredded cheddar cheese

1 cup cooked and seasoned ground beef (or turkey)

½ cup black beans, rinsed and drained

½ cup corn (canned or frozen)

½ cup diced tomatoes

¼ cup chopped green onions

½ teaspoon cumin

½ teaspoon chili powder

¼ teaspoon garlic powder

1 cup fresh lettuce, shredded

½ cup sour cream (for dipping)

Fresh cilantro leaves, for garnish (optional)

Instructions
 

In a mixing bowl, combine the cooked ground beef, black beans, corn, diced tomatoes, green onions, cumin, chili powder, and garlic powder. Mix well to ensure all ingredients are evenly distributed.

    Lay a tortilla on a flat surface. Spread a generous layer of the beef and bean mixture across the center of the tortilla, leaving about an inch of space at the edges for rolling.

      Sprinkle a layer of shredded cheddar cheese evenly over the mixture, followed by a handful of shredded lettuce.

        Carefully roll the tortilla tightly from one edge to the other, making sure the filling stays inside. Repeat this process for the remaining tortillas.

          Once all tortillas are rolled, use a sharp knife to slice each roll into bite-sized pieces, about 1 to 2 inches thick.

            Arrange the tortilla roll-ups on a serving platter. Garnish with fresh cilantro leaves if desired, and serve with a small bowl of sour cream for dipping.
