Ingredients

2 ribeye steaks (about 1-inch thick)

Salt and black pepper, to taste

2 tablespoons olive oil

3 tablespoons unsalted butter, divided

4 cloves garlic, minced

1 cup heavy cream

1 cup grated Parmesan cheese

8 ounces fettuccine pasta

1 cup fresh spinach

1 tablespoon Dijon mustard

Fresh parsley, chopped (for garnish)

Zest of 1 lemon

Pinch of red pepper flakes (optional)

Instructions

Prepare the Pasta: Bring a large pot of salted water to a boil. Cook the fettuccine according to package instructions until al dente. Reserve ½ cup of pasta cooking water, then drain the pasta and set aside.

Season the Steaks: While the pasta is cooking, season both sides of the ribeye steaks generously with salt and black pepper.

Sear the Steaks: In a large skillet, heat the olive oil over medium-high heat. Once hot, add the steaks and sear for about 4-5 minutes on each side for medium-rare, or cook to your desired doneness. Remove the steaks from the skillet and let them rest on a cutting board, covered loosely with aluminum foil.

Create the Sauce: In the same skillet (leave the drippings), reduce the heat to medium and add 1 tablespoon of butter. Once melted, add the minced garlic and sauté until fragrant (about 30 seconds). Add the heavy cream, stirring to combine, and bring to a gentle simmer.

Add Cheese and Spinach: Stir in the grated Parmesan cheese, Dijon mustard, and the remaining butter until melted and smooth. Add the cooked fettuccine, spinach, and a splash of the reserved pasta water to the sauce. Toss until the pasta is evenly coated. Season with salt, black pepper, and red pepper flakes if desired. Add lemon zest for extra brightness.

Slice the Steaks: Thinly slice the rested steaks against the grain.

Serve: Plate a generous serving of the creamy fettuccine pasta on each dish, then top with sliced steak. Garnish with chopped parsley for freshness. Serve immediately, enjoying the luxurious combination of flavors and textures!
