2 cups cooked rice (white or brown)

1 lb boneless, skinless chicken thighs or breast, diced

1 tablespoon olive oil

1 teaspoon chili powder

1 teaspoon cumin

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon smoked paprika

Salt and pepper to taste

1 can (15 oz) black beans, rinsed and drained

1 cup corn (fresh, frozen, or canned)

1 cup cherry tomatoes, halved

1 medium red bell pepper, diced

1 avocado, diced

½ cup shredded cheddar cheese

¼ cup fresh cilantro, chopped

Juice of 1 lime

Sour cream or Greek yogurt for serving (optional)

Salsa or pico de gallo for serving (optional)

Instructions
 

Cook the Rice: Begin by cooking the rice according to package instructions, then set aside. You can use any rice you prefer; brown rice will add a nutty flavor, whereas white rice is more traditional.

    Prepare the Chicken: In a large bowl, toss the diced chicken with olive oil, chili powder, cumin, garlic powder, onion powder, smoked paprika, salt, and pepper until evenly coated.
