Ingredients
  

For the Meatballs:

1 lb ground chicken

1/4 cup finely chopped cilantro

2 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 tablespoon fish sauce

1 tablespoon lime juice

1 small red chili, minced (adjust to taste)

1/2 cup breadcrumbs

1/4 teaspoon salt

1/4 teaspoon black pepper

For the Curry Sauce:

1 tablespoon vegetable oil

1 onion, finely chopped

2 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 tablespoon red curry paste

1 can (13.5 oz) coconut milk

1 tablespoon fish sauce

1 tablespoon brown sugar

Squeeze of lime juice

Fresh basil leaves, for garnish

Cooked jasmine rice, for serving

Instructions
 

Prepare the Meatballs:

    - In a large bowl, combine the ground chicken, cilantro, minced garlic, grated ginger, fish sauce, lime juice, minced red chili, breadcrumbs, salt, and pepper. Mix until just combined.

      - Form the mixture into small meatballs, about 1 inch in diameter.

        Cook the Meatballs:

          - Heat a large skillet over medium heat and add a drizzle of oil. Once hot, add the meatballs in batches, cooking for about 4-5 minutes on each side or until they are golden brown and cooked through. Remove from the skillet and set aside.

            Make the Curry Sauce:

              - In the same skillet, add a tablespoon of vegetable oil. Add the chopped onion and sauté for 3-4 minutes until translucent.

                - Add the minced garlic and grated ginger; cook for another minute until fragrant.

                  - Stir in the red curry paste and cook for 1-2 minutes until it begins to darken slightly.

                    - Pour in the coconut milk, stirring to combine. Add fish sauce, brown sugar, and a squeeze of lime juice. Bring to a simmer.

                      Combine Meatballs and Sauce:

                        - Gently add the cooked meatballs back into the skillet with the curry sauce. Simmer for an additional 5-7 minutes, allowing the meatballs to absorb some of the sauce flavors.

                          Serve:

                            - Serve the Thai chicken meatballs over cooked jasmine rice, garnished with fresh basil leaves and a lime wedge on the side.
