1 lb ground chicken

1 tablespoon olive oil

3 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 red bell pepper, finely diced

1 cup shredded carrots

2 green onions, sliced

1/4 cup chopped fresh cilantro

1/4 cup roasted peanuts, chopped (plus extra for garnish)

Salt and pepper to taste

1 head of butter or romaine lettuce, leaves separated

For the Peanut Sauce:

1/4 cup natural peanut butter

2 tablespoons soy sauce

1 tablespoon lime juice

1 tablespoon honey or maple syrup

1 teaspoon sriracha (optional, for heat)

2 tablespoons warm water (to adjust consistency)

Instructions
 

Prepare the Peanut Sauce: In a small bowl, whisk together the peanut butter, soy sauce, lime juice, honey, and sriracha (if using). Gradually add warm water to reach your desired consistency. Set aside.

    Cook the Chicken: In a large skillet, heat the olive oil over medium-high heat. Add the minced garlic and grated ginger, sauté for about 30 seconds until fragrant.

      Add Chicken: Add the ground chicken to the skillet. Cook, breaking it apart with a spatula, until it is no longer pink, about 5-7 minutes. Season with salt and pepper.

        Incorporate Vegetables: Stir in the diced red bell pepper, shredded carrots, and half of the chopped green onions. Cook for another 3-4 minutes until the veggies are tender yet crisp.
