Thai Peanut Noodles

8 oz rice noodles

1 cup diced bell peppers (red, yellow, and green)

1 cup shredded carrots

1 cup snap peas

1/2 cup green onions, chopped

1/4 cup fresh cilantro, chopped (for garnish)

1/4 cup crushed peanuts (for garnish)

For the Peanut Sauce:

1/2 cup creamy peanut butter

3 tbsp soy sauce (or tamari for gluten-free)

2 tbsp lime juice (freshly squeezed)

1 tbsp honey or maple syrup

1-2 tsp sriracha (adjust for spice level)

2 cloves garlic, minced

1 tsp grated ginger

1/4 cup warm water (for thinning the sauce)

Instructions
 

Prepare the Noodles: Begin by cooking the rice noodles according to package instructions. Once cooked, drain and rinse them under cold water to stop the cooking process. Set aside.

    Make the Peanut Sauce: In a medium bowl, combine the peanut butter, soy sauce, lime juice, honey, sriracha, minced garlic, and grated ginger. Mix well until smooth. Gradually add the warm water, stirring until the sauce reaches your desired consistency.

      Sauté the Vegetables: In a large skillet or wok, heat a tablespoon of oil over medium-high heat. Add the diced bell peppers, shredded carrots, and snap peas. Sauté for about 5 minutes, or until the vegetables are tender-crisp.

        Combine: Add the cooked and cooled noodles to the skillet with the sautéed vegetables. Pour the peanut sauce over the top and toss everything together gently until evenly coated.

          Garnish and Serve: Transfer the noodles to a serving platter or individual bowls. Top with chopped green onions, fresh cilantro, and crushed peanuts for an extra crunch. Serve immediately, and enjoy!
