Ingredients

1 ¾ cups all-purpose flour

2 tsp baking powder

1 tsp baking soda

½ tsp salt

½ cup unsweetened cocoa powder

1 cup granulated sugar

½ cup brown sugar, packed

1 cup brewed coffee, cooled

½ cup vegetable oil

2 large eggs

2 tsp vanilla extract

1 cup chocolate chips (semi-sweet or dark)

Optional: Powdered sugar for dusting

Instructions

Preheat Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9x13 inch cake pan.

Mix Dry Ingredients: In a large mixing bowl, combine the flour, baking powder, baking soda, salt, cocoa powder, granulated sugar, and brown sugar. Whisk until thoroughly mixed.

Mix Wet Ingredients: In another bowl, combine the cooled coffee, vegetable oil, eggs, and vanilla extract. Mix well until fully combined.

Combine Mixtures: Gradually add the wet ingredients into the dry ingredients, mixing until just combined. Be careful not to overmix; a few lumps are okay.

Fold in Chocolate Chips: Gently fold in the chocolate chips, ensuring they are evenly distributed throughout the batter.

Pour into Pan: Pour the batter into the prepared cake pan, spreading it evenly.

Bake: Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.

Cool: Allow the cake to cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.

Serve: Once cooled, dust with powdered sugar if desired, slice, and serve. Enjoy your delightful chocolate coffee cake with a cup of coffee or tea!
