8 ounces elbow macaroni

2 tablespoons unsalted butter

2 tablespoons all-purpose flour

2 cups whole milk

1 cup sharp cheddar cheese, grated

1 cup mozzarella cheese, grated

½ cup parmesan cheese, grated

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon paprika

Salt and pepper to taste

½ cup breadcrumbs (optional, for topping)

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the elbow macaroni according to package instructions until al dente. Drain and set aside.

    Make the Roux: In a large saucepan over medium heat, melt the butter. Once melted, sprinkle in the flour and whisk continuously for about 1-2 minutes until it forms a paste (roux).

      Add Milk: Gradually add the whole milk to the roux, whisking constantly to prevent lumps. Continue to cook for 4-5 minutes until the mixture thickens slightly.

        Incorporate Cheeses: Remove the saucepan from heat. Stir in the sharp cheddar, mozzarella, and parmesan cheese until melted and creamy.

          Season the Sauce: Add garlic powder, onion powder, paprika, salt, and pepper to the cheese sauce, mixing well to combine. Taste and adjust seasonings as desired.

            Combine Pasta and Sauce: Stir the cooked macaroni into the cheese sauce until well coated.

              Optional Breadcrumb Topping: If you like a crispy topping, pour the mac and cheese into a greased 9x13 inch baking dish. In a small bowl, mix the breadcrumbs with a tablespoon of melted butter, then sprinkle evenly over the mac and cheese.
