2 lbs (900g) baby Yukon Gold potatoes

3 tablespoons olive oil

2 tablespoons unsalted butter, melted

1 teaspoon sea salt

½ teaspoon black pepper

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried rosemary or thyme (or a mix of both)

Fresh parsley, finely chopped (for garnish)

Instructions
 

Preheat oven: Preheat your oven to 425°F (220°C). This high temperature is key for achieving crispy skin.

    Prepare potatoes: Wash and scrub the baby Yukon Gold potatoes well. You can leave the skins on for added texture and flavor. If any potatoes are larger than the others, halve or quarter them for even cooking.

      Parboil potatoes: In a large pot, bring water to a boil and add a generous pinch of salt. Carefully drop in the potatoes and let them simmer for about 10-15 minutes, or until just tender but not falling apart. Drain and let them sit for a few minutes to cool slightly.

        Rough up the potatoes: Using a potato masher or the back of a fork, gently press down on each potato just enough to break the skin and create some rough edges. This will help maximize the crispy surface during roasting.

          Mix the oil and butter: In a small bowl, combine the olive oil, melted butter, sea salt, black pepper, garlic powder, onion powder, and dried herbs. Whisk until well combined.
