4 boneless, skinless chicken breasts

1 cup low-sodium chicken broth

1 can (14 oz) diced tomatoes with green chilies

1 medium onion, diced

4 cloves garlic, minced

2 teaspoons Italian seasoning

1 teaspoon smoked paprika

1 tablespoon olive oil

1 teaspoon salt

½ teaspoon black pepper

1 cup frozen corn

1 cup black beans, rinsed and drained

1 lime, juiced

Fresh cilantro, for garnish

Optional: avocado slices and shredded cheese for serving

Instructions
 

Sear the Chicken: In a large pan over medium heat, add olive oil. Season the chicken breasts with salt, pepper, and smoked paprika. Once the oil is hot, add the chicken and sear for 2-3 minutes on each side until golden brown. Remove from heat and set aside.
