1 baguette (or crusty Italian bread)

4 cups ripe tomatoes, finely diced (such as Roma or vine-ripened)

1/2 cup fresh basil leaves, chopped

3 cloves garlic, minced

1/4 cup extra-virgin olive oil, plus more for drizzling

1 tablespoon balsamic vinegar

Salt, to taste

Freshly cracked black pepper, to taste

Optional: 1/4 cup finely diced red onion for added crunch

Optional: Shaved Parmesan cheese for topping

Preheat your oven: Begin by preheating your oven to 400°F (200°C).

    Prepare the bread: Slice the baguette diagonally into 1/2-inch thick slices. Arrange the slices on a baking sheet. Brush both sides lightly with olive oil and sprinkle with a pinch of salt.

      Toast the bread: Bake in the preheated oven for about 5-7 minutes, or until golden brown and crisp. Keep an eye on them to prevent burning. Once toasted, take them out and let them cool slightly.

        Make the tomato topping: In a bowl, combine the diced tomatoes, minced garlic, chopped basil, balsamic vinegar, and the 1/4 cup of olive oil. If you’re using red onion, add it at this stage. Gently stir to mix the ingredients together.

          Season the mixture: Add salt and freshly cracked black pepper to taste. Let the mixture sit for about 10-15 minutes to allow the flavors to meld together.

            Assemble the bruschetta: Spoon a generous amount of the tomato and basil mixture onto each toasted bread slice, letting some of the juices drip onto the bread for extra flavor.
