6 ripe medium tomatoes, diced (preferably heirloom)

1 cup fresh basil leaves, chopped

2 cloves garlic, minced

3 tablespoons extra virgin olive oil

1 tablespoon balsamic vinegar

Freshly cracked black pepper, to taste

1 baguette or crusty Italian bread, sliced (about 12 slices)

Optional: 1/4 cup grated Parmesan cheese

Prep the Tomatoes: In a medium bowl, combine the diced tomatoes with the minced garlic, chopped basil, olive oil, balsamic vinegar, salt, and black pepper. Gently toss everything together until well mixed. Allow the mixture to sit for at least 15-30 minutes at room temperature. This waiting time lets the flavors meld beautifully.

    Toast the Bread: Preheat your oven to 400°F (200°C). Arrange the sliced baguette on a baking sheet and brush both sides lightly with olive oil.
