1 ½ cups all-purpose flour

½ cup granulated sugar

½ teaspoon baking soda

2 teaspoons baking powder

¼ teaspoon sea salt

1 large egg

½ cup unsalted butter, melted and cooled

½ cup buttermilk (or milk with a splash of lemon juice)

Zest of 1 large lemon

1 tablespoon fresh lemon juice

1 cup fresh blueberries (or frozen, if unavailable)

Optional: 2 tablespoons coarse sugar for topping

Preheat the Oven: Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or spray with non-stick cooking spray.

    Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, granulated sugar, baking soda, baking powder, and sea salt until thoroughly combined.

      Prepare Wet Ingredients: In a separate bowl, beat the egg. Then add the melted butter, buttermilk, lemon zest, and lemon juice. Whisk together until smooth and well combined.
